Portuguese Chicken Burger

My favourite kind of chicken burger - the Portuguese Chicken Burger! Spiced chicken breast with some fresh fillings make for a classic chicken burger that you can’t go wrong with.

Ingredients

500g Lilydale Chicken Breast, sliced in half lengthways into steaks
1 cup mayonnaise
1 cup Perfect Italiano Perfect Melt  

Peri Peri Spice Paste
2 tbsp smoked paprika
2 tbsp ground coriander
1 tbsp dried oregano
1 tbsp dried parsley
1 tsp freshly ground black pepper
2 tsp sea salt
2 cloves garlic, minced
1 golden shallot, minced
1-2 birds eye chillis (pending how hot you want), minced
2 tbsp Gourmet Garden Zesty Lemon Paste
1/3 cup Squeaky Gate The All Rounder Extra-Virgin Olive Oil  

To serve
4 classic burger buns, sliced in half
1 head Cos lettuce, leaves torn
200g Perino Tomatoes, sliced in half

 

Method

Step 1. Preheat the Everdure Fusion to high heat.
Step 2. To make the Peri Peri Spice Paste, add all ingredients to a bowl and mix to combine well.
Step 3. Scoop 4 tbsp of the paste into a large bowl and add the Lilydale Chicken Breast steaks and massage the paste into the chicken to coat well.
Step 4. Place chicken onto the hot grill and cook for 2 minutes on each side, or until browned. Sprinkle over the Perfect Italiano Perfect Melt Cheese and allow to cook for 2 more minutes, until cheese is melted and chicken has cooked through.
Step 5. Add the mayonnaise to a bowl and add in 1 tbsp of the Peri Peri Spice Paste and mix to combine.
