Hot Pork Roll with Celery & Apple Slaw

No cooking needed for these easy Hot Pork Rolls made using the ready-made Riverview Farms Hot Roast Pork. I paired these with a fresh dill and lemon mayonnaise and a crisp slaw to cut through the richness of the pork. An easy recipe for a quick lunch or if you need to cater for a group.

Ingredients

1 x  Riverview Farms Hot Roast Pork, sliced into 0.5cm thick slices
4 bread rolls, sliced in half
1 tbsp Western Star Original Spreadable Soft Butter

Herby Mayonnaise
1/2 cup mayonnaise
2 tbsp finely chopped dill leaves
1/2 lemon, juiced
1/2 teaspoon sea salt
Pinch freshly ground black pepper  

Celery & Apple Slaw
2 stalks celery, leaves picked and stems finely sliced
1 small green apple, finely sliced
1/2 small fennel, finely sliced
1 teaspoon flaky sea salt
1/2 lemon, juiced
2 tsp Squeaky Gate The All Rounder Extra-Virgin Olive Oil

 

Method

Step 1. To make the Herby Mayonnaise, add all ingredients to a small bowl and stir to combine.
Step 2. To make Celery & Apple Slaw. Add all ingredients to a bowl and toss to combine.
Step 3. To assemble, add a dollop of the Herby Mayonnaise, some Celery & Apple Slaw and top with sliced Riverview Farms Hot Roast Pork. Spread Western Star Original Spreadable Soft Butter onto the lid of the bread rolls, then place on top of the roll to finish.
