Mushroom, Ricotta & Truffle Pizza

I love a white-based pizza and this one is a cracker, made with Perfect Italiano Ricotta and Perfect Pizza blend! The mushrooms with the truffle, garlic and thyme makes for the most delicious pizza, you’ll need to make a few to satisfy your guests!

Ingredients

300g Perfect Italiano Ricotta
½ cup Perfect Italiano Perfect Pizza
2 tsp truffle oil
2 cloves garlic, minced
4 stalks thyme, leaves picked
1 tsp fresh lemon zest
400g Swiss Brown Mushrooms, stalks finely chopped and mushrooms finely sliced
1 tbsp Squeaky Gate The All Rounder Extra-Virgin Olive Oil
Pinch sea salt and freshly ground black pepper
Your favourite pizza dough recipe

 

Method

Step 1. Preheat Everdure Kiln to high.
Step 2. Add the Perfect Italiano Ricotta, Perfect Italiano Perfect Pizza, ¼ cup of finely chopped mushroom stems, truffle oil, lemon zest and half of the garlic and thyme into a bowl and mix to combine well.
Step 3. Add the sliced Swiss Brown Mushrooms to another bowl with the remaining thyme and garlic, drizzle over the olive oil and season with a pinch of salt and pepper. Toss to coat the mushrooms in the oil.
Step 4. Stretch out your pizza dough until it’s a thin, 12-inch pizza base and place onto the Everdure Pizza Peel. Spoon over the Ricotta Mixture, taking almost to the edges of the dough. Then  sprinkle over the seasoned mushrooms.
Step 5. Place pizza into the Kiln and cook for 90 seconds, until the pizza crust is charred and puffed up and the mushrooms are nicely browned.
Step 6. Remove from the Kiln, slice and eat warm!
